Khloe’s Mash-Up

Next time you crave mashed potatoes, instead go for Khloe’s carb-free version, using cauliflower florets.

Yield: 3-4

Preparation Time: 22mins

Ingredient List:

1 cup water

1 large head cauliflower (broken into florets)

1 tablespoon olive oil

Sea salt

Freshly ground black pepper

1 clove garlic (peeled, chopped)

Chives (chopped)

Instructions:

1. In a pot, bring 1 cup of water to a simmer. Add the cauliflower florets.

2. Cover the pot with a lid and increase the heat to moderate. Cook until fork-tender, 12-15 minutes. Drain and set aside ¼ cup of the cauliflower cooking water.

3. Add the oil followed by a pinch of salt, a dash of pepper, the garlic, and the chives.

4. Using a potato masher, mash the cauliflower, until it resembles mashed potatoes. You can add the cauliflower cooking water, 1 tablespoon at a time if needed.
